You can't talk about exceptional decaf without mentioning the name Wilton Benitez! This is our second Wilton Benitez drop and it was just released by Black & White roasters! This one is a thermal shock decaf (Castillo) and is another exceptional decaffeinated coffee that pushes the boundaries of flavour. It has a delicate and complex flavour profile featuring lemongrass, black tea, candied grapefruit, and apricot, this decaf offers a vibrant and refined cup that redefines what decaffeinated coffee can be.

Wilton Benitez is a Colombian coffee producer with over 26 years of experience, combining his background as a chemical engineer with a passion for coffee innovation. His farm, Granja Paraíso 92, is equipped with a microbiology lab, quality control lab, and processing plant, allowing him to pioneer advanced techniques like thermal shock and controlled fermentation. Wilton’s work exemplifies the intersection of science and craftsmanship, producing coffees that are both unique and extraordinary.
Processing
This coffee undergoes a meticulous thermal shock protocol, involving two rounds of sterilisation, fermentation, and rinsing with warm and cold water to enhance flavour clarity and sweetness. The decaffeination process utilises Ethyl Acetate (EA), a sugar alcohol by-product that gently removes caffeine while preserving the coffee’s vibrant, natural flavours.
