The Story Behind the Coffee

Siruma Coffee, founded five years ago, takes its name from the indigenous Wayuunaiki language meaning "Heaven and Skies." They specialise in partnering with underserved farming communities across Cauca, Caldas, and Tolima, focusing on transparency and fair pricing.

The Central Cauca Association for Peace was created by a local farmer determined to add value to Castillo coffee and provide stable income for neighbours to avoid illicit crops. This coffee represents hope and positive change in post-conflict Colombia.

The Process

This coffee undergoes a meticulous process designed to maximise sweetness and complexity. Very ripe cherries are picked for higher sugar content, then floated to remove defects. The cherries spend 48 hours in a mechanical silo at 28°C, dehydrating to 20% moisture, followed by 24-hour fermentation in sealed bags.

The drying process uses the same mechanical silo at 37°C until reaching 15% moisture, then finishes in a parabolic drying system to achieve 10% moisture. Finally, the coffee is decaffeinated by Descafecol using their sustainable sugarcane-based process.

Impact & Quality

By purchasing from the same supply chains as regular coffee, Siruma pushes more volume and revenue to farming partners. This results in fully traceable decaf community lots scoring 85+ SCA points whilst paying farmers more and supporting positive change in their communities.
