Produced by 24-year-old Angie Hernandez, it showcases the next generation of coffee excellence from one of Colombia's most celebrated farms.

The Producer

At just 24 years old, Angie Hernandez represents the future of specialty coffee. An industrial engineer leading Los Nogales' laboratory, she combines her family's generations of coffee expertise with fresh innovation in microbiology and fermentation research. As a powerful voice for women in coffee, Angie is revolutionising how we think about processing and decaffeination.

The Process

This coffee undergoes an exceptional journey. After careful selection and cleaning, the cherries are pulped and subjected to a 90-hour pre-fermentation in mossto derived from the same variety. What makes this decaf truly unique is that the entire decaffeination process happens on the farm itself.

Angie employs a groundbreaking approach: creating ethyl acetate naturally through alcoholic and acetic fermentation of the coffee's own cherry skins. This farm-derived solvent gently removes caffeine over 48 hours while preserving the coffee's vibrant fruit notes and complex character. The beans then undergo a precise 8-day controlled drying process to lock in maximum flavour.

Expect exceptional depth and complexity with vibrant notes of raspberry, candy, and herbal notes. It's a unique coffee and it's the same processing method and varietal that helped win the 2024 US Brewer's Cup Championship! 

Please Note: Due to variations in international regulations, this coffee is classified as decaffeinated in the US and many countries (97% of the caffeine from the coffee beans has been removed), but as low-caffeine in the UK and EU where stricter standards apply. (99.9% free of caffeine).. Regardless of classification, it delivers an extraordinary cup that challenges all expectations of what decaffeinated coffee can be.
