Sourced from smallholder farms in the Villamaría community of Caldas, Colombia, this experimental decaf showcases innovation in process and precision in flavour. Delivered fresh to the Jamaica station in Chinchiná, the cherries are transformed through a unique low-temperature fermentation and sugarcane decaffeination that preserve the coffee’s natural character and sweetness.
This is lovely clean tasting decaf with notes of papaya, blackberry, and sherry. We found it works well as filter or espresso (if you're fan of lighter roasts).

The Story Behind the Coffee
Villamaría is a network of small family farms spread across Caldas, working together to deliver ripe, hand-picked cherry to the La Aurora collection point. Managed by Rubiel Orrego, La Aurora consolidates daily deliveries and sends them to the Jamaica drying station in Chinchiná. Situated at 1,300 MASL, Jamaica benefits from warmer, steady air that allows for consistent, slow drying — key to the clarity and balance found in this cup.
The Water Pillow fermentation method, pioneered at El Fénix, uses a sealed, water-cooled environment to limit oxygen and stabilize temperature. This gentle, extended fermentation develops fruit precursors, builds sweetness, and maintains clean acidity without the harshness sometimes found in long ferments. After washing, the coffee is carefully dried on raised beds with controlled airflow and humidity.
Decaffeination takes place nearby at Descafecol using the natural sugarcane EA process. The short transfer time preserves the integrity of the flavour profile created during fermentation and drying. The result is a decaf that feels confident and fruit-forward — syrupy, balanced, and unmistakably crafted rather than compromised.
