This coffee undergoes an innovative process where red fruits are added during fermentation, allowing fruit esters to penetrate the coffee's structure and create lasting, vibrant flavours. The result is an intensely fruity decaf, one of the fruitiest on the market that tastes nothing like traditional decaf coffee.
Sebastian controls variables like temperature and pH during limited oxygen fermentation, adding mosto (glucose-rich liquid from previous fermentations) to create consistent, homogeneous profiles. His experimental approach at El Placer continues to push the boundaries of what's possible in coffee processing.
