The Story Behind the Coffee
Founded over three decades ago by Edilberto Vergara and Nubia Ayure, Finca Las Flores began as a small family operation rooted in precision and care. Today, brothers Jhoan and Diego Vergara carry that legacy forward, combining their parents’ dedication with a deep curiosity for process innovation.
The farm’s steep, fertile slopes are shaded by native and fruit trees, providing ideal conditions for slow cherry development and dense, sugar-rich Pink Bourbon fruit. Each harvest, ripe cherries are hand-picked and undergo staged anaerobic fermentations designed to layer acidity, sweetness, and complexity. A brief oxidation stage and thermal shock follow, techniques that enhance aromatic expression and texture before careful drying.
Once stable, the coffee is decaffeinated by Descafecol using the sugarcane EA method — a natural, sustainable process that preserves the coffee’s vibrant profile while gently removing caffeine. The result is an aromatic, spice-laden cup with the clarity and nuance that define Las Flores: notes of spices (we taste clove and ginger), citrus, and pink pepper. We roast light but this one works as filter or espresso — or soup!
